Mint Chocolate Cookie Dough Bites

I have not tried these yet but they sound super yummy and have a base of sweet potato, coconut, and dates. No refined sugars. I've included the link below - Click the 'Yum!'

Oatmeal Cookies

Ok, so once again I came home from my 2 mile walk and had a piece if cinnamon raisin Ezekiel bread and some coffee. So again in an hour I am hungry. Searching Pinterest I found a morning cookie recipe, which I altered slightly. The cookies are yummy, healthy, and helps to get rid of those old bananas!
3 very ripe bananas mashed  (sorry Greg!)
1/3 cup applesauce ( I used the homemade one I make and posted a few weeks ago)
2 cups of oats
1/4 cup of unsweetened almond milk
1/2 cup raisins ( could sub another dried fruit since Ryan does not like raisins- the rest of us do)
1/2 cup chopped nuts (I used walnuts)
1 tsp cinnamon ( I used a little more)
1 tsp vanilla
1 quick squirt of Stevia

Mix all ingredients together and let sit for about 5 minutes. Place rounded teaspoons on cookie sheet and bake for 20 minutes at 350. Cool and enjoy! I store these in the refrigerator and the recipe made 2 1/2 dozen cookies!

Oatmeal Bites

So breakfast is a struggle for me since I cannot eat eggs so I keep searching for something that will be filling and tasty. I found this on Pinterest and it is really good, especially with coffee or tea!
1 cup peanut butter
1 cup honey ( I used about 1/2 c)
3 cups oats

Combine honey and peanut butter over low heat and stir until mixed and velvety. Add the 3 cups of oats. Once combined press into an 8 x 8 pan, cover and once set cut into bars!

Chocolately Mint Shake

Nothing says Saint Patrick's Day like a mint shake!  And nothing goes with mint like chocolate.  Made this shake this morning and even Leah like it...shhhh, don't tell her there's avocado in it!  I didn't get a picture because my camera batteries are out, but it turns out to be a nice green color without any food coloring. 

Ingredients:
  • 1 1/2 to 2 c. unsweetened almond milk (or sub milk of your choice)
  • 1 ripe avocado
  • 1/2 c. frozen spinach (fresh is fine too, I use frozen because I like my shakes cold)
  • 3/4 T. vanilla extract
  • 1 tsp. powdered stevia
  • 5 drops liquid stevia
  • 1 tsp. peppermint extract
  • 1 tsp. unsweetened cocoa or cacao powder
  • Ice (~6 to 8 ice cubes)

Directions:
  1. Blend milk with avocado, spinach, extracts and sweeteners until spinach is liquefied.
  2. Add cocoa powder and pulse.
  3. Add ice and blend
  4. Top with homemade whip cream and or chocolate chips or cacao nibs if you'd like!

Raspberry Lime Yogurt Pops



 
Ingredients:
1 cup plain greek yogurt
1 cup frozen or fresh raspberries
1 medium-large lime, juiced
stevia to taste (or honey or agave)

Directions:
In a blender, add all the ingredients together and mix until smooth.  Pour into popsicle molds, freeze, and enjoy!  I use about 1 1/2 tsp. of powdered stevia when I make them.

Satisfy that chocolate need!


So I am home on break this week and reward myself after I grade a certain number of tests by cooking. I found this one on Pinterest and thought it would be a good snack. Not being a honey lover, I only used about 2 tablespoons rather than the 1/3 cup but difficult to roll into a ball! 
These are delicious and I could probably eat 4 for breakfast and be satisfied! 

Energy Bites (as titled on Pinterest)

1 cup rolled oats (OLD fashioned, NOT quick)
1/2 cup peanut butter (or almond butter)
1/3 cup RAW honey
1/2 cup ground flax seeds
1/3 cup coconut
1/3 cup raw sunflower seeds (unsalted)
1/2 cup mini chocolate chips, OR, dark chocolate chunks
1/4 tsp salt
1 tsp vanilla
Mix altogether and refrigerate 45 minutes to an hour
Roll into small balls and keep refrigerated...


I also made these!
Chocolate chip banana oat cookies! This was also on Pinterest. I adjusted somewhat from that recipe!
1 1/2 cups oats
2 large, ripe bananas mashed
2 tbl peanut butter, I use organic natural kind from Krogers
<1/2 c of chocolate chips (either vegan or bittersweet ones)
Mix together and drop by rounded tablespoons onto baking sheet and bake at 350 for @18 minutes. Recipe made about 15 cookies! Very yummy! Even  Dad loved them! 

There is another recipe I want to make, but needed applesauce. I always make my own. Peel and thinly slice 4 to 8 apples ( any kind). 4.apples yields about 2 cups of applesauce. In saucepan cook on low until apples are soft enough to mash. Add dash of nutmeg and cinnamon to taste ( possibly 1 tablespoon for 4 apples). Mix well and simmer about 5 minutes more. Refrigerate and enjoy at anytime. Wyatt may really like this!
